The Fix


As in, The Chocolate Fix.  Sometimes all a girl wants is chocolate.



For the last week or so I've been trying to use up the surplus food in the fridge.  We have a lot of zucchini.  After awhile sauteed veggies gets a little boring.  Enter: chocolate zucchini cake.  Recipe courtesy of Lady Wilkinson.  I owe her one.



For anyone interested, the recipe is below.

Chocolate Zucchini Cake

(Cream together)
1/2 c. butter (or margarine...but that's gross)
1/2 c. oil
1 3/4 c. sugar
2 eggs
1 tsp. vanilla
1/2 tsp. salt

Then add:
1/2 c. sour cream
4 Tbsp. cocoa (I put in a tisch more)
1 tsp. baking soda
2 1/2 c. flour
1/2 tsp. cinnamon
2 c. grated zucchini

Mix together and pour into greased and floured cake pan.  Bake at 350 for 35-40 minutes.  After it's cooled I powdered some cocoa on top and sprinkled shaved almonds.  It was good.  Especially for breakfast.
